Vines
20 to 40 years old vines of Pinot Noir.
Early manual harvesting in 20 kgs baskets. 100 % destemmed then selection on sorting table. Short pellicular maceration to alcoholic fermentation with natural yeast. Daily light pumping-over.
10 months of ageing, 40 % in traditional pièces bourguignonnes, 25% of new oak (3 new barrels). Rest of the wine is aged in a large foudre. Bottling July 2020.
Typical nose of Pinot Noir, with a great balance between red fruit flavors and vegetal notes of black-berry bush and laurel. Red Bourgogne is geared towards being enjoyed in its youth with a couple of years of bottle ageing.
