Terroir

Fairly fine clay-limestone soil

Vines

Average of 30 to 50 years old Chardonnay. Systematic disbudding.

Grapes are chilled down to 12°c, direct crushing, no destemming to facilitate flow. Fermentation in barrel lasting 15 to 30 days. 

Aged in local French oak of 1 to 3 wines.
Bottled in November.

Carrefuly crafted nose with notes of hawthorn and angelica. The mouth offers beautiful bitters that require a refined cuisine.

Married at 7 in 1337, widowed at 11, Marguerite de Flandre marries in a second wedding Philippe II de Bourgogne "the Bold". After her father died, she inherits countries of Bourgogne, Artois, Frandre, Rethel and Nevers.
